Main Ingredients- Dried Pollack (Buk-eo) Strips: 2 handfuls (approx. 30-40g)
- Eggs: 2
- Green Onion: 1 stalk (separate white and green parts)
- Water: 7 cups (approx. 1.4L)
Cooking Instructions
Step 1
First, prepare about 2 handfuls of dried pollack strips (or dried cod strips). If there are any tough parts, tear them into bite-sized pieces. Place the prepared pollack in a bowl and add just enough water to cover it. Let it soak for about 1-2 minutes. (Be careful not to soak for too long, as it can become mushy.)
Step 2
Gently squeeze out the excess water from the soaked pollack strips with both hands. This helps remove any fishy smell while retaining its savory flavor.
Step 3
Heat a pot over medium heat. Add 1 Tbsp of sesame oil and 1 Tbsp of minced garlic to release their aroma. Be careful not to burn the garlic. Add the white parts of the chopped green onion and sauté for about 1 minute until fragrant. Sautéing the pollack strips with them will add even more depth of flavor.
Step 4
Pour 7 cups (approx. 1.4L) of fresh water into the pot with the sautéed ingredients. Turn the heat to high and bring it to a boil with the lid off.
Step 5
Once the water comes to a rolling boil, reduce the heat to medium. Cover the pot with a lid and let it simmer for about 10 minutes, allowing the pollack to infuse its flavor into the broth. This step ensures a clear and refreshing soup base.
Step 6
After 10 minutes, remove the lid and add 1 tsp of soup soy sauce for seasoning. If you don’t have soup soy sauce, use 1 tsp of salt, but start with less and adjust to your preference after tasting.
Step 7
When the broth starts to boil again, crack 2 eggs into a separate bowl and whisk them lightly. Slowly pour the beaten eggs into the boiling soup in a circular motion. Do not stir immediately; let the eggs cook undisturbed. This will create beautiful ribbons of cooked egg. Wait until the egg is softly set.
Step 8
As the eggs are almost cooked, add the green parts of the chopped green onion and a pinch of black pepper, if desired. Simmer for another moment. Your Pollack Egg Soup is now ready!
Step 9
Your warm and satisfying Pollack Egg Soup is complete! Enjoy it with rice for a hearty breakfast or as a light lunch.
