First, let’s prepare the ingredients. Roll up the square fish cakes like a sushi mat and slice them about 0.5cm thick, or cut them into triangles or rectangles into bite-sized pieces. Thinly slice the red onion and carrot, and roughly chop the green onion to add fragrance.

Heat 2 tablespoons of olive oil in a pan over low heat. Add the roughly chopped green onion and 1 tablespoon of minced garlic. Sauté them gently until the sweet aroma of the scallions and the flavor of garlic infuse into the oil, creating a fragrant scallion oil. Be careful not to burn them.
