Ingredients
  • Fish cakes (Eomuk) 3 pieces
  • Radish (Moo) 100g
  • Kelp (Dasima) 1 sheet (approx. 10cm x 10cm)
  • Dried anchovies or dried shrimp for broth 2 Tbsp
  • Soy sauce for soup or Tsuyu 1 Tbsp

Cooking Instructions

Step 1

Prepare 3 pieces of fish cake and 100g of radish. We’ll also use kelp and dried shrimp to create a flavorful broth. Utilizing ingredients you already have at home will enhance the taste.

Step 2

Pour 600ml of water into a pot and place it over medium heat. Once the water begins to boil, add the kelp and dried shrimp. Let it simmer for about 5-10 minutes to extract a clear and deep broth.

Step 3

While the broth is simmering, cut the prepared ingredients into bite-sized pieces. Slice the radish thinly or into cubes, and cut the fish cakes as desired. Cutting them into appropriate sizes will prevent them from falling apart during cooking.

Step 4

You can remove the dried shrimp after the broth has simmered, or leave them in. If you prefer a clearer broth or if children tend to pick out the shrimp, using a broth bag will make them easier to remove.

Step 5

Remove the kelp and dried shrimp from the broth. Add the sliced radish and fish cakes and bring to a boil. Once boiling, reduce the heat to medium and simmer until the radish becomes translucent.

Step 6

Add soy sauce for soup or Tsuyu to season the broth. Using bonito flake broth or commercial Tsuyu will add a deeper umami flavor. (Adjust the seasoning to your preference using ingredients you have at home.)

Step 7

It’s best to start with about 1 tablespoon and taste, then adjust the seasoning as needed. If you accidentally add too much, don’t worry! You can always add more water to dilute the flavor.

Step 8

Once all the ingredients are cooked and the seasoning is just right, bring the soup to a rolling boil to finish. This piping hot Eomukguk is perfect as a hearty meal with rice or as a delicious accompaniment to drinks.
