Main Ingredients

  • 1 piece of Korean radish (daikon), about 150g
  • 2 sheets of square fish cakes (eomuk/odeng)
  • 1 handful of dried anchovies for broth (about 10g)
  • 1 green chili pepper or mild chili

Seasoning & Broth Ingredients

  • 1 Tbsp soy sauce for soup (Guk-ganjang)
  • 1 Tbsp minced garlic
  • Pinch of salt (to taste)

Cooking Instructions

Step 1

First, prepare the Korean radish. About 150g is a good amount. Wash the radish thoroughly, slice it thinly about 0.5cm thick, and then julienne it into strips about 0.3cm wide. Slicing it this way helps to release the radish’s refreshing flavor into the broth.

In a pot, combine the dried anchovies (with innards removed to reduce bitterness) and 1.1 liters of cold water. Place over high heat and bring to a boil with the lid off.

Once the water comes to a boil, continue to simmer for 3-5 minutes to extract the anchovy broth. Avoid boiling the anchovies for too long, as this can make the broth bitter. After simmering, remove the anchovies. Add the 2 sheets of square fish cakes, cut into bite-sized pieces. Adding fish cakes to boiling broth helps them retain their shape and texture.

After the fish cakes have simmered for a moment, add the diagonally sliced green chili pepper for a hint of freshness. Next, stir in 1 tablespoon of soy sauce for soup and 1 tablespoon of minced garlic, ensuring the seasonings are well distributed throughout the broth.

When the soup is bubbling vigorously, reduce the heat slightly and taste it. If the flavor from the soy sauce isn’t enough or it tastes too bland, add a pinch of salt, adjusting to your preference. Be careful not to make it too salty. Serve immediately while hot!
