Main Ingredients- 1 bowl of warm rice (approx. 200g)
- 2 fresh eggs
- 2 stalks of scallion, white parts thinly sliced (about 1/2 cup)
- 1 Tbsp cooking oil
- 1 Tbsp butter
Seasoning & Spices- 2 Tbsp soy sauce
- 0.3 Tbsp roasted sesame seeds (about 1/2 tsp)
- Pinch of black pepper (to taste)
- 2 Tbsp soy sauce
- 0.3 Tbsp roasted sesame seeds (about 1/2 tsp)
- Pinch of black pepper (to taste)
Cooking Instructions
Step 1
First, prepare the scallions to add flavor to your dish. Finely chop the white parts of 2 washed scallions. The thinner you slice them, the more fragrant scallion oil will be extracted.
Step 2
Place 1 bowl of warm rice in a wide bowl. Crack in 2 fresh eggs. Gently mix the rice and eggs with chopsticks or a fork until well combined, ensuring no clumps. The egg coating will help the rice grains separate beautifully when stir-frying.
Step 3
Heat a pan over medium-low heat. Add 1 Tbsp of cooking oil and 1 Tbsp of butter. As the butter melts, it adds a richer flavor to the fried rice. Once the butter is melted, add all the sliced scallions and stir-fry for about 1-2 minutes until fragrant, creating a delicious scallion oil.
Step 4
When the scallions are slightly cooked and turning translucent, push them to one side of the pan and pour in 2 Tbsp of soy sauce. Let the soy sauce sizzle and caramelize slightly in the pan to develop a deep flavor. Stir the caramelized soy sauce with the scallions and stir-fry until it’s almost cooked, creating a rich aroma. This step maximizes the umami of the soy sauce.
Step 5
Now, add the rice mixed with egg into the pan. It’s important to start stir-frying immediately after adding the rice so the egg coating doesn’t clump.
Step 6
Quickly stir-fry, breaking up the rice clumps. Use a spatula or chopsticks to continuously stir and separate the rice grains, ensuring they remain fluffy. Stir-fry until the rice is well combined with the fragrant scallions and the delicious soy sauce mixture. Once the rice is fluffy and well-cooked, add 0.3 Tbsp of roasted sesame seeds and a pinch of black pepper. Mix everything evenly, and your delicious egg fried rice is ready!
Step 7
Serve with kimchi or a simple soup for a delightful meal! It’s also a fantastic way to use up leftover rice.
