Craving a delicious homemade dish using ingredients you already have? This recipe introduces ‘Egg Dumplings,’ a delightful and quick meal made with eggs and glass noodles. It’s much simpler than traditional dumplings and perfect as a side dish or a satisfying snack. Enjoy this easy egg-based delicacy!
Ingredients- 4 eggs
- 80g glass noodles
- 10g carrot
- 15g onion
- 15g green onion
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp sugar
- 1 tsp salt
- Vegetable oil for cooking
Cooking Instructions
Step 1
First, prepare 80g of glass noodles. Soak them in hot water until they become soft and pliable. While the noodles are soaking, get your other ingredients ready.

Finely dice 10g of carrot, 15g of onion, and 15g of green onion. While precise measurements can be skipped for a more casual approach, for this recipe, I’ve measured each ingredient’s weight using measuring cups and a scale. Accurate measurements help ensure consistent delicious results.
Step 3
Check if the glass noodles have softened while you were chopping the vegetables. If they still feel stiff even after soaking in hot water, let them soak for about 20 more minutes. Properly softened noodles will give you the best texture.
Step 4
In a bowl, crack 4 eggs. Add 1 Tbsp of cooking wine and 1 Tbsp of sugar. Whisk well with chopsticks or a whisk until the sugar is dissolved.
Step 5
Once the glass noodles are softened, drain them well. Cut them into pieces about 2-3 cm long. Cutting them to a manageable size will make them easier to handle when cooking.

To the beaten egg mixture, add the soaked glass noodles, diced carrots, diced onion, and diced green onion. Stir everything together so that all ingredients are evenly distributed within the egg mixture.

Add 1 tsp of salt to season. Even though these will be served with ketchup, it’s important to season the filling adequately. Taste and adjust the salt if needed.

Mix all the ingredients thoroughly in the bowl. Ensure the glass noodles and vegetables are evenly coated with the egg mixture.

Heat a non-stick skillet over medium heat and add a generous amount of vegetable oil. Spoon portions of the egg dumpling batter into the pan, forming small, round shapes. Avoid overcrowding the pan.
