Ingredients
- Soaked dried seaweed (about 15-20g dried)
- Beef for soup (lean cut) – a small amount
- 1 Tbsp sesame oil
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, if using dried seaweed, soak it in cold water for about 20-30 minutes until fully rehydrated. Rinse the soaked seaweed thoroughly under running water, gently squeezing it to remove any grit. Squeeze out excess water and then cut it into bite-sized pieces (about 3-4 cm in length). Cutting it smaller makes it easier to eat.
Step 2
Gently pat the beef dry with paper towels to remove any excess blood. Heat 1 tablespoon of sesame oil in a pot over medium heat. Add the beef to the pot and then add the prepared seaweed on top.
Step 3
Sauté the ingredients together over medium heat. Stir-fry until the seaweed wilts slightly and the beef changes color, just until it’s mostly cooked through. Be careful not to overcook the seaweed, as it can become tough.
Step 4
Once the beef is almost fully cooked and has turned opaque, add 2 tablespoons of soup soy sauce (guk-ganjang). This seasoning step adds a rich umami flavor to the soup.

Now, pour in 1.5 cups (about 300ml) of water. The amount of water can be adjusted based on the size of your pot and the quantity of seaweed used. If you prefer a soupier consistency, feel free to add a little more water.

Add 1 tablespoon of minced garlic. Garlic adds a refreshing aroma and enhances the overall flavor of the soup. You can adjust the amount of garlic to your preference. I personally like a strong garlic flavor, so I added a generous tablespoon.
Step 7
Cover the pot and simmer on low heat for at least 15 minutes. The longer the soup simmers, the more tender the seaweed will become, and the deeper the flavors of the beef and seaweed will meld into the broth, resulting in a more delicious soup. Skim off any foam that rises to the surface during cooking for a clearer broth.
Step 8
Your delicious beef seaweed soup is ready! Serve hot in a bowl with freshly cooked rice. When serving to children, make sure the soup has cooled down to a safe temperature and check that the pieces of seaweed are not too large or tough, ensuring a safe and enjoyable meal for them.
