Soft and Nutritious Tri-Color Vegetable Steamed Egg Recipe
Searching for a soft dish for my husband, whose chewing is difficult, I looked through the refrigerator and found leftover spinach and carrots from a previous meal. I thought, ‘I can just blend them and add them to steamed eggs,’ and decided to make a tri-color steamed egg with three vibrant colors. This dish is not only nutritious and visually appealing but also melts in your mouth, offering a delightful culinary experience.
Main Ingredients- 12 Eggs

- 100g Carrot
- 450ml Clear Broth (or vegetable broth)
- 1 tsp Salt
- A little Sesame Oil

Cooking Instructions
Step 1
First, we’ll prepare the broth to be used when blending the spinach and carrot. Pour 500ml of water into a pot, add 1 stock cube, and bring it to a boil. Once boiling, turn off the heat and let the broth cool completely. (You can also use broth made from kelp or anchovies instead of stock cubes.)
Step 2
Wash and prepare the spinach and carrot. Place the spinach in a blender, and separately place the carrot. Gradually add some of the cooled broth to each while blending until you achieve a very smooth puree. It’s important that the vegetables are blended smoothly without any lumps. Set aside the pureed vegetables and the cooled broth.
Step 3
Prepare a total of 12 eggs. To make the tri-color steamed egg, we will divide them into 4 eggs for each of the three colors. (e.g., carrot, spinach, and plain egg white layers)

First, it’s time to make the plain white egg layer. Crack 4 eggs into a clean bowl. Pass the eggs through a fine-mesh sieve to remove the chalazae (the stringy bits) and whisk them gently. Sieving the eggs will result in an even smoother steamed egg.

Add the pureed carrot to the prepared egg mixture. Stir in 1/3 teaspoon of salt. The carrot will add its natural sweetness and vibrant color to the steamed egg. Mix well until all ingredients are evenly combined.

Next, we’ll make the spinach steamed egg. In a separate bowl, whisk 4 eggs and pass them through a sieve. Add the pureed spinach to this mixture. Stir in another 1/3 teaspoon of salt and mix gently. This will create a delicious steamed egg with a fresh green hue.
Step 7
Now, let’s prepare for steaming. Lightly grease the inside of the small pot you’ll use for steaming with sesame oil. This prevents the steamed egg from sticking and makes it easy to remove later. Carefully pour the carrot-egg mixture into the greased pot. Place this pot inside a steamer (a pot with a lid and a rack, or a dedicated steamer). Add water to the steamer, bring it to a boil, then cover the steamer and cook over medium-low heat for about 10-15 minutes.
Step 8
When the carrot-egg mixture is about 90% cooked (it should be slightly set but still a bit moist when poked with a skewer), gently pour the spinach-egg mixture on top. Cover the steamer again and steam for another 5-7 minutes. Layering the ingredients this way helps maintain distinct color layers.
Step 9
Once the spinach-egg mixture is also about 90% cooked, carefully pour the plain egg mixture (the 4 sieved eggs) on top. Cover the steamer again and steam for another 5-7 minutes until fully cooked. It’s best to steam over medium-low heat from the beginning to achieve a tender texture, rather than high heat.
Step 10
Check if the steamed egg is fully cooked by inserting a skewer into the center; it should come out clean. Once cooked, turn off the heat of the steamer and wait for the steam to subside and the pot to cool down slightly. Wear oven mitts as the pot handle will be hot, and carefully remove the steamed egg pot from the steamer.
Step 11
To easily unmold the steamed egg, carefully run a thin knife around the edge of the pot to loosen it. Then, place a plate or tray on top of the pot and invert them together. The steamed egg should slide out onto the plate, looking beautifully presented.
Step 12
Carefully transfer the steamed egg from the plate to a cutting board and slice it into desired portions. Arrange the slices on a serving dish, showing off the colorful cross-section. You’ll see a beautiful, wavy pattern of three colors.
