  • 100ml kombu dashi stock (warm or at room temperature)
  • Chopped chives or green onions (about 1-2 Tbsp)
  • Finely diced carrots (about 1-2 Tbsp)
  • 1/2 tsp salt (using a coffee spoon)

Cooking Instructions

First, prepare the kombu dashi stock to enhance the flavor of your dish. You can do this by soaking a piece of kombu (about 5x5cm) in 200ml of cold water for at least 10 minutes, or by bringing water to a boil, adding kombu for 5 minutes, then turning off the heat and removing the kombu. Alternatively, for a deeper flavor, soak the kombu in cold water overnight.

In a bowl, combine 100ml of the prepared kombu dashi stock with 2 fresh eggs. Gently whisk them together, being careful not to create too much foam. It’s important to mix the egg whites and yolks thoroughly.

For an even smoother texture, strain the egg mixture through a sieve. This crucial step removes the chalazae (the stringy white bits from the egg whites), resulting in a steamed egg custard as smooth and silky as pudding. Don’t skip this!

To efficiently remove the chalazae with a sieve, gently stir the egg mixture with chopsticks as you pour it through the sieve. This method makes it much easier to separate and remove the chalazae, ensuring a clean and smooth result.
