Ingredients
  • 2 large eggs
  • 1 package soft silken tofu
  • 1 handful mozzarella cheese
  • 3 Tbsp perilla oil (or sesame oil)
  • 1/2 tsp salt
  • Pinch of black pepper

Cooking Instructions

Step 1

In a mixing bowl, crack 2 large eggs and add 1/2 teaspoon of salt. Whisk gently until the yolks and whites are just combined. Avoid over-whisking to maintain a smooth texture.

Step 2

Carefully open the package of silken tofu. You can gently press out excess water, or simply spoon the soft tofu into the bowl with the eggs. Gently break up the tofu slightly with your spoon and mix it with the egg mixture. The tofu will add incredible creaminess to the final dish.

Step 3

Heat 3 tablespoons of perilla oil in a non-stick pan or pot over low heat. Perilla oil adds a wonderful nutty aroma. Once the oil is warm, pour in the egg and tofu mixture. Cook over low heat, stirring gently and continuously with a spatula. The goal is to cook the eggs and tofu into a soft, custardy consistency, similar to scrambled eggs but much creamier, without letting it stick to the bottom.

Step 4

As the egg mixture begins to thicken and cook, add a handful of mozzarella cheese. Stir gently until the cheese is melted and incorporated, creating a gooey, cheesy texture. Season with a pinch of black pepper. Be careful not to overcook at this stage, as it can make the eggs tough.

Step 5
