  • 1 Tbsp mentaiko (roe only, membranes removed)
  • A small handful of fresh lettuce or green onions
  • A sprinkle of roasted seaweed flakes
  • 1 fresh egg
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • A little cooking oil

Mayonnaise Wasabi Sauce

  • 1 Tbsp mayonnaise
  • 1/2 tsp mild wasabi paste

First, prepare all the ingredients for your delicious Avocado Mentaiko Bibimbap. It’s best to choose an avocado that is ripe and yielding to the touch.

[Pro Tip: How to Prepare Avocado] Step 1: Score the avocado around the pit with a knife, then hold it with both hands and twist gently to separate into halves. Step 2: Carefully insert the tip of your knife into the pit and twist it left and right to easily remove it. Step 3: Use a spoon to scoop out the avocado flesh from the skin. Step 4: Dice the avocado flesh into bite-sized pieces, about 1cm thick.

[Easy Way to Extract Mentaiko Roe] Make a lengthwise cut along the mentaiko and gently scrape out the roe with a spoon. Discard the membrane and use only the fish roe.

Lightly oil a pan and fry the fresh egg. Tip: Covering the pan and cooking over very low heat will result in a beautifully soft-boiled egg with a perfectly runny yolk.

(Tip: You can add the sesame oil right after adding the rice, or mix it in at the very end when you toss everything together – both ways are delicious!) Top the rice with the fried egg, fresh greens (lettuce or green onions), seaweed flakes, diced avocado, and the mentaiko roe. Finish by sprinkling toasted sesame seeds over the seaweed and adding a dollop of the mayonnaise wasabi sauce on top of the mentaiko. Your bibimbap is ready!
