  • 1/2 pack silken tofu (approx. 150g)
  • 3 fresh eggs
  • 1 Tbsp finely minced green onion
  • 1 Tbsp finely minced carrot
  • A pinch of sesame seeds (for garnish)

First, prepare the kelp broth for a deep, savory flavor. Place 1-2 pieces of kelp in 1 cup of cold water in a pot and let it steep for about 10 minutes. (Alternatively, you can soak the kelp in cold water in the refrigerator for over 30 minutes.) Remove the kelp and let the broth cool completely. Using hot broth might cook the eggs prematurely.

Wash and finely mince the green onion and carrot. These colorful vegetables will add a subtle sweetness and enhance the flavor of the steamed egg.

Gently remove the silken tofu from its packaging and place it in a sieve for a few minutes. This allows excess water to drain, resulting in a firmer, more delightful texture. Once drained, cut the tofu into bite-sized pieces (about 1-1.5cm thick).

Crack 3 fresh eggs into a wide bowl. Gently whisk them until the yolks and whites are well combined.

To the cooled kelp broth (1/2 cup), add 1/2 Tbsp of tuna extract, 1/3 tsp of salt, and 1 Tbsp of sesame oil for a nutty aroma. You can substitute tuna extract with soy sauce, and adjust the saltiness according to your preference.

Be careful not to overcook, as it can become dry.
