  • 1/2 pack Silken Tofu
  • 5 Fresh Eggs
  • 2 Tbsp Shrimp Brine (for umami)
  • 60ml Dried Kelp Water (for tenderness)
  • 2 Tbsp Bell Pepper (finely minced)
  • 2 Tbsp Scallion (finely minced)

Cooking Instructions

First, soak a piece of dried kelp (about 75ml of water) in water for at least 30 minutes to create a flavorful kelp broth. Set aside 60ml for the steamed egg, and you can use the remaining water for other dishes.

Wash the bell pepper and scallions, pat them dry, and then finely mince them. Mincing them finely ensures they integrate beautifully into the custard and add a pleasant texture.

Take half a pack of silken tofu and cut it into manageable pieces, about 1 to 1.5 cm thick. Cutting them too thinly might cause them to break apart, so maintaining a moderate thickness is key.

In a bowl, crack the 5 fresh eggs and whisk them gently with a whisk until smooth. Add 2 tablespoons of shrimp brine for a savory depth and mix well. Using shrimp brine instead of salt adds a richer flavor profile to the egg custard.

Pour the prepared 60ml of kelp water into the whisked egg mixture and stir again to combine thoroughly. Carefully transfer this mixture into a microwave-safe bowl. Arrange the cut silken tofu pieces on top.

Evenly sprinkle the minced bell pepper and scallions over the silken tofu. If you prefer a more vibrant look, feel free to add more vegetables. However, if you want to emphasize the delicate texture of the tofu, you can moderate the vegetable amount or mix them directly into the egg mixture beforehand.

Cover the microwave-safe bowl tightly with plastic wrap, then poke several holes in the wrap with a fork to allow steam to escape. Microwave in stages: 4 minutes, followed by another 4 minutes, and finally 2 minutes, for a total of 10 minutes. (Cooking times may vary depending on your microwave’s wattage, so check for doneness and adjust as needed.)
