Main Ingredients- 2 blocks silken tofu (refrigerated, soft variety)
- 1 medium potato (approx. 150g)
Black Sesame Dressing Ingredients- 3 Tbsp mayonnaise (creamy, standard mayonnaise)
- 2 Tbsp oligodang (for subtle sweetness and shine)
- 1 Tbsp soy sauce (for umami)
- 1 Tbsp vinegar (for a balancing tang)
- 1 Tbsp cooking wine (Mirin or Sake, to enhance flavor and remove odors)
- 2 Tbsp roasted black sesame powder (the key to a rich, nutty flavor)

Cooking Instructions
Step 1
Wash the potato thoroughly, then slice it into very thin strips. Thinner strips will result in a crispier texture when fried. Soak the potato strips in cold water for about 10 minutes to remove excess starch. This step helps them become crispy even without a batter.

In a bowl, combine all the dressing ingredients: mayonnaise, oligodang, soy sauce, vinegar, cooking wine, and roasted black sesame powder. Whisk vigorously with a whisk or spoon until smooth and well combined, ensuring no lumps of black sesame powder remain. This creates a rich and nutty black sesame dressing.
