  • 1 pack Cheongpomuk (silken tofu, approx. 300g)
  • 3 sheets seasoned seaweed (gim)
  • 1 Tbsp toasted sesame seeds

Cut the Cheongpomuk into bite-sized pieces, about 1cm thick and long strips. Using a tofu knife will help you achieve cleaner cuts.

In a wide pot, add plenty of water and a pinch of salt. Once the water is boiling vigorously, add the cut Cheongpomuk and blanch for just 1-2 minutes. When the tofu turns transparent, immediately remove it, rinse briefly in cold water, and drain thoroughly in a colander. Be careful not to over-boil, as it can cause the tofu to break apart.

Place the drained Cheongpomuk in a bowl and add 1 Tbsp of sesame oil. Gently mix the tofu first. This step coats the tofu with sesame oil, preventing it from sticking together or crumbling, and helps the seasonings absorb better.

Now it’s time to add the remaining seasoning ingredients. To the bowl, add the finely chopped green onion, 1 Tbsp toasted sesame seeds, a pinch of salt, and the remaining 0.5 Tbsp of sesame oil. (You can add a little minced garlic or black pepper to taste, if desired.)

Tear the seasoned seaweed (gim) into small pieces or cut it into thin strips. Generously sprinkle the prepared seaweed over the seasoned Cheongpomuk.

Now, gently toss all the ingredients together until well combined. Use chopsticks or your hands to carefully lift and fold the mixture, ensuring the tofu doesn’t break and the seasonings are evenly distributed.
