Basic Ingredients

  • 2 packs silken tofu (approx. 680g)
  • 2 stalks green onions
  • 1/4 large onion
  • 1 green chili pepper
  • 1 red chili pepper
  • 3 cloves garlic, minced
  • A little fresh ginger, minced
  • 150g ground pork (can substitute with ground beef or seafood)
  • Grapeseed oil, as needed
  • Perilla oil (deulgireum), as needed
  • 15g gochugaru (Korean chili flakes, approx. 1.5 Tbsp)
  • 20ml soy sauce (approx. 1.5 Tbsp)
  • 300ml water
  • A pinch of black pepper
  • 15ml tuna extract (fish sauce, approx. 1 Tbsp)
  • A pinch of salt
  • 10g cornstarch (approx. 1 Tbsp)
  • 30ml water (for cornstarch slurry)
  • A sprinkle of black sesame seeds (for garnish)

Today, instead of the popular silken tofu ramen, we’re going to make a ‘Silken Tofu Rice Bowl’! ( ღ’ᴗ’ღ) It’s a delicious recipe that everyone, young and old, can enjoy. Let’s get started!

## Step 1: Prepare Fresh Vegetables

First, thinly slice 2 stalks of green onions. These will add flavor to the topping. You can slice a bit extra to use as a garnish later.

Heat a pan over medium heat and add a drizzle of grapeseed oil and perilla oil. Add the sliced green onions and sauté until fragrant, about 1 minute. Reserve some of the green onion for garnish.

Add the minced garlic and sauté for another 30 seconds until fragrant, being careful not to burn it.

Now, add the minced ginger and sauté briefly with the garlic and green onions, allowing their aromas to meld.

Sauté over medium-low heat for about 1 minute until the fragrance intensifies. Adjust the heat to prevent any burning.

Add 150g of ground pork. Break it up with a spoon or chopsticks and stir-fry until it’s no longer pink. Ensure it’s well-browned for maximum flavor. (If using beef or seafood, cook until done.)

Once the pork is cooked, add 15g of gochugaru (approx. 1.5 Tbsp). Stir-fry for about 1 minute until the chili oil starts to appear. This process toasts the chili flakes and deepens their flavor.

Pour 20ml of soy sauce (approx. 1.5 Tbsp) around the edges of the pan. Let it sizzle and caramelize slightly against the hot pan, which adds another layer of flavor. (You can add more soy sauce later if needed).
