Cooking Instructions
Step 1
Today, instead of the popular silken tofu ramen, we’re going to make a ‘Silken Tofu Rice Bowl’! ( ღ’ᴗ’ღ) It’s a delicious recipe that everyone, young and old, can enjoy. Let’s get started!
Step 2
## Step 1: Prepare Fresh Vegetables
Step 3
First, thinly slice 2 stalks of green onions. These will add flavor to the topping. You can slice a bit extra to use as a garnish later.
Step 4
Finely mince 1/4 of a large onion. The sweetness of the onion will enhance the savory depth of the dish.
Step 5
Finely chop 1 green chili pepper and 1 red chili pepper. Remove the seeds if you prefer less heat. These add a nice color and a touch of spiciness.
Step 6
Mince 3 cloves of garlic. Minced garlic forms the aromatic base of many Korean dishes.
Step 7
Mince a small amount of fresh ginger. Ginger helps to remove any gamey odors and adds a warm, fragrant note. Use sparingly, as ginger can be quite potent.
Step 8
And that’s all the vegetable prep needed for our delicious silken tofu rice bowl! The ground pork (donmin찌) can be substituted with ground beef, minced shrimp, or minced squid for a different but equally tasty variation.
Step 9
## Step 2: Create the Savory Tofu Sauce
Step 10
Heat a pan over medium heat and add a drizzle of grapeseed oil and perilla oil. Add the sliced green onions and sauté until fragrant, about 1 minute. Reserve some of the green onion for garnish.
Step 11
Add the minced garlic and sauté for another 30 seconds until fragrant, being careful not to burn it.
Step 12
Now, add the minced ginger and sauté briefly with the garlic and green onions, allowing their aromas to meld.
Step 13
Sauté over medium-low heat for about 1 minute until the fragrance intensifies. Adjust the heat to prevent any burning.
Step 14
Add 150g of ground pork. Break it up with a spoon or chopsticks and stir-fry until it’s no longer pink. Ensure it’s well-browned for maximum flavor. (If using beef or seafood, cook until done.)
Step 15
Continue to cook the pork until it’s fully cooked through.
Step 16
Once the pork is cooked, add 15g of gochugaru (approx. 1.5 Tbsp). Stir-fry for about 1 minute until the chili oil starts to appear. This process toasts the chili flakes and deepens their flavor.
Step 17
Pour 20ml of soy sauce (approx. 1.5 Tbsp) around the edges of the pan. Let it sizzle and caramelize slightly against the hot pan, which adds another layer of flavor. (You can add more soy sauce later if needed).
Step 18
Turn the heat up to high and let the soy sauce bubble and reduce slightly.
Step 19
Stir everything together, mixing the soy sauce well with the other ingredients. This allows the flavors to meld together.
Step 20
Add the chopped onion and stir-fry for about 1 minute until it becomes slightly translucent. This softens the onion and brings out its sweetness.
Step 21
Gently add the silken tofu packs to the pan. Be careful not to break the tofu too much; you want some nice chunks.
Step 22
Pour in 300ml of water. It’s important not to add too much water at the beginning! Silken tofu releases its own liquid as it cooks, so it’s best to observe the consistency as it simmers and add more water only if necessary.
Step 23
Adjust the water level as needed. You can add more water or let it simmer longer to thicken the sauce, depending on the amount of liquid released from the tofu.
Step 24
Sprinkle in a pinch of black pepper for added aroma and flavor.
Step 25
Add 15ml of tuna extract (fish sauce, approx. 1 Tbsp) for a boost of umami. If you don’t have tuna extract, you can use soy sauce or fish sauce.
Step 26
Bring the mixture to a boil over high heat and simmer for about 2 minutes, allowing the flavors to meld together.
Step 27
Add the chopped red and green chilies. They add vibrant color and a pleasant hint of spice.
Step 28
Taste the sauce and add a pinch of salt if needed to adjust the seasoning. The required saltiness will vary based on the soy sauce and other ingredients used.
Step 29
If you need to add more saltiness, use soy sauce to reach the desired level. The total soy sauce amount should be around 20ml.
Step 30
Finally, prepare the cornstarch slurry by mixing 10g of cornstarch with 30ml of water. Slowly pour this mixture into the simmering sauce while stirring constantly. This will thicken the sauce to a perfect consistency for topping rice.
Step 31
Simmer for another minute after adding the cornstarch slurry until the sauce thickens beautifully. Your delicious silken tofu sauce is ready!
Step 32
Serve a generous portion of hot steamed white rice in a bowl. Spoon the warm silken tofu sauce generously over the rice. Garnish with the reserved chopped green onions and a sprinkle of black sesame seeds for a visually appealing and flavorful finish!
