Introducing an incredibly simple yet hearty and warming Silken Tofu Egg Drop Soup! It’s rich in flavor, savory, and packed with nutrients, making it a perfect meal or a satisfying one-bowl dish.
Ingredients- 1 pack silken tofu
- 1 egg
- 1/2 stalk green onion
- 1/4 onion
- 1 handful enoki mushrooms
- 1/2 Tbsp salted shrimp (or soy sauce)
- 1 Tbsp chicken stock (or 300ml anchovy-kelp broth)
Cooking Instructions
Step 1
First, prepare the stars of today’s dish: silken tofu and an egg. For a wonderfully smooth texture, soft silken tofu is recommended. For aromatics and flavor, chop the green onion, slice the onion thinly, and separate the enoki mushrooms. Don’t forget the salted shrimp for a umami boost and chicken stock (or broth) to create a delicious soup base.
Step 2
Carefully place the silken tofu pack into a small earthenware pot (ttukbaegi). You don’t need to drain the tofu as it has enough natural moisture. Pour in about 3 cups (300ml) of water or broth and bring it to a boil over high heat.
Step 3
As the soup begins to simmer, it’s time to add the prepared vegetables. While the soup is boiling, thinly slice the onion and finely chop the green onion. For the enoki mushrooms, trim the ends and gently separate them into smaller clumps. You can also cut them in half if you prefer.
Step 4
Once the soup is bubbling, add the sliced onion and chopped green onion. These vegetables will add a natural sweetness and a refreshing taste to the broth, deepening its overall flavor.
Step 5
Next, add the enoki mushrooms. To maintain their pleasant chewy texture, avoid overcooking them. Let them cook just until they soften slightly.
Step 6
Whisk one egg in a small bowl until well combined. Slowly drizzle the beaten egg into the simmering soup in a circular motion, allowing it to cook into delicate ribbons.
Step 7
Finally, it’s time to season the soup. Add 1 tablespoon of chicken stock and 0.5 tablespoon of salted shrimp using a tablespoon (the one used for eating rice). If you don’t have salted shrimp, you can substitute with soy sauce or salt. Taste and adjust the seasoning according to your preference.

Once all the ingredients have melded together and a delightful aroma fills the air, your soup is ready! Serve immediately while hot to enjoy the wonderful harmony of soft tofu, savory egg, and refreshing vegetables.
