  • 2 heaping tablespoons silken tofu
  • 1/3 teaspoon salt

  • Water (total 200ml including silken tofu)

Cooking Instructions

Step 1

In a bowl, crack 3 large eggs (about 150ml) and add 2 heaping tablespoons of silken tofu. Add 1/3 teaspoon of salt to the eggs and whisk gently until smooth. Ensure the silken tofu is well incorporated without lumps.

Step 2

Combine the silken tofu and water to create a total liquid volume of approximately 200ml. For example, you can use 180ml of water plus the 2 tablespoons of silken tofu.

Step 3

To the 200ml mixture of water and silken tofu, add 1/3 teaspoon of tuna extract (or fish sauce) and another 1/3 teaspoon of salt. Stir well to season. If tuna extract is unavailable, you can substitute with anchovy-kelp broth or a clear vegetable broth for a similar effect.

Step 4

Pour the prepared silken tofu and egg mixture into a pot or a microwave-safe dish. Cover with a lid or plastic wrap and cook. If using a pot, simmer over low heat. If using a microwave, cook for 2 minutes initially.

Step 5

Check the custard after the initial 2-minute microwave cooking. If the center still seems a bit undercooked, microwave for an additional minute until it’s fully set. Note that total cooking time may vary depending on your microwave’s wattage.

If you’re adding optional ingredients like bell peppers or chives, finely chop them first. These will add color and texture, making the dish even more appealing.
