Essential Ingredients
- 4 eggs
- 1 cup silken tofu
- 1 green onion stalk (finely chopped)
Cooking Instructions
Step 1
First, crack 4 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them gently with a fork or whisk to create a smooth egg mixture. Removing the chalazae contributes to a silkier texture.
Step 2
To the whisked eggs, add 1/3 tsp salt and 1/3 tsp sugar, and mix well to season. Then, add the finely chopped green onion and 1 cup of silken tofu. Gently fold these ingredients into the egg mixture, being careful not to break up the tofu too much, until just combined.
Step 3
Now, pour the prepared egg and tofu mixture into an earthenware pot (or any oven-safe, heatproof dish). Place the pot over low heat and begin to cook gently. Maintaining a low heat is crucial for achieving the perfect texture, so avoid high heat.
Step 4
As the egg mixture starts to cook around the edges of the pot, use a chopstick or spatula to gently stir the cooked portions from the sides towards the center. This step helps the custard cook evenly into soft curds and prevents it from sticking to the bottom.
Step 5
Once about 80% of the egg mixture has set into soft curds, cover the pot with a lid. The residual heat will gently finish cooking the custard, making it incredibly moist and tender.
Step 6
After about 2-3 minutes with the lid on, the custard should be fully cooked, and you might hear a faint steaming sound from the pot. Remove the lid, drizzle 2 Tbsp of sesame oil all around the surface for added aroma, and sprinkle with toasted sesame seeds. Your delicious silken tofu and egg custard is ready to be enjoyed immediately while warm!
