Main Ingredients

  • Chives: 1/5 bunch (wash thoroughly and cut into 3cm pieces)
  • Silken Tofu: 400g (gently drain excess water)
  • Pancake Mix (Buchim Garu): 2 cups (using a standard paper cup, approx. 200g)
  • Eggs: 2

Cooking Instructions

First, prepare one package (400g) of silken tofu. Open the package and gently pat the surface with a paper towel to remove excess water. Be careful not to press too hard, as this can cause the tofu to crumble. (Excessively draining the water can result in a dry pancake).

Wash the fresh chives thoroughly under running water. It’s important to rinse them well to remove any dirt or debris. Once washed and drained, cut the chives into bite-sized pieces, about 3cm long.

In a large bowl, crack the 2 eggs. Add the prepared chives, silken tofu, and 2 cups of pancake mix (measured with a standard paper cup). You can add the silken tofu as a block; it will break down as you mix.

Using a spatula or spoon, gently mix all the ingredients to form a batter. Avoid overmixing, as this can make the pancake tough. Mix just until everything is evenly combined. If the batter seems too thin, add a little more pancake mix. If it’s too thick, add a tablespoon of water at a time until you reach a good consistency. (A few lumps are perfectly fine; they add texture!)

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ensure the oil is sufficiently hot to prevent the pancake from sticking and to achieve a crispy texture. If the oil isn’t hot enough, the pancake will absorb too much oil.

Using a ladle or spoon, scoop portions of the batter and carefully spread them onto the hot pan to form round, flat pancakes. Avoid making them too thick, as this will increase cooking time. Aim for a moderate thickness for even cooking.

Once the bottom of the pancake turns golden brown and you see small bubbles forming (indicating it’s ready to flip), carefully flip it using a spatula or tongs. Cook the other side for another 3-4 minutes, or until it’s also golden brown and cooked through. Once both sides are beautifully golden, your delicious silken tofu and chive pancake is ready! Serve hot with your favorite dipping sauce.
