Silken Tofu and Assorted Vegetable Bibimbap

With our two children grown and living independently, it’s now just the two of us. Consequently, I find myself preparing more side dishes with assorted vegetables. This bibimbap is made with six kinds of seasoned vegetable side dishes and a flavorful ‘dallae’ (Korean wild chive) sauce, topped with soft silken tofu. It’s a delightful and wholesome meal perfect for any occasion.

Sautéed Bean Sprouts

  • 1 bag bean sprouts
  • 1 Tbsp bean oil
  • 2 Tbsp oyster sauce
  • Pinch of sesame seeds

Sautéed Zucchini

  • 1 zucchini
  • 1 Tbsp soy sauce
  • Pinch of minced garlic
  • Pinch of sesame oil
  • Pinch of sesame seeds

Seasoned Radish

  • 1/3 daikon radish
  • Pinch of minced garlic
  • Pinch of salt or soy sauce
  • Pinch of sesame oil
  • Pinch of sesame seeds

Sautéed Shiitake Mushrooms

  • 5 shiitake mushrooms
  • 1 Tbsp soy sauce
  • 1 Tbsp perilla oil (or sesame oil)
  • Pinch of minced garlic
  • Pinch of sesame seeds

Sautéed Carrots

  • 1 carrot
  • Pinch of salt
  • Pinch of sesame oil
  • Pinch of sesame seeds

Seasoned Spinach

  • 150g spinach
  • 1 Tbsp soy sauce (or salt)
  • Pinch of minced garlic (optional)
  • Pinch of sesame oil
  • Pinch of sesame seeds

Assembling the Silken Tofu Bibimbap

  • 100g silken tofu
  • 6 prepared namul (vegetable side dishes)
  • 1 egg
  • 1 bowl cooked rice
  • Pinch of sesame oil
  • Pinch of sesame seeds
  • Dallae sauce (store-bought or homemade)

Cooking Instructions

Step 1

1. **Prepare Sautéed Bean Sprouts:** Heat 1 Tbsp bean oil in a pan over medium-high heat. Add the washed bean sprouts and stir-fry until they become slightly translucent and wilted. Stir in 2 Tbsp oyster sauce and a pinch of sesame seeds, then quickly mix and remove from heat. Be careful not to overcook, as they can release excess water.

2. **Prepare Sautéed Zucchini:** Wash the zucchini, trim the ends, and slice it into strips about 0.5cm thick. Lightly oil a pan and sauté the zucchini over medium heat until tender. Add 1 Tbsp soy sauce and a pinch of minced garlic, and continue to stir-fry. Finish by drizzling with a pinch of sesame oil and sprinkling with sesame seeds for a nutty aroma.

3. **Prepare Seasoned Radish:** Peel the daikon radish and slice it into strips about 0.5cm thick. Lightly oil a pan and sauté the radish strips over medium-low heat until slightly translucent. Season with soy sauce or salt to taste. Finish by adding a pinch of sesame oil and sesame seeds for a subtle, savory flavor.

4. **Prepare Sautéed Shiitake Mushrooms:** Clean the shiitake mushrooms, trim the stems, and slice them into strips about 0.5cm thick. Heat 1 Tbsp perilla oil (or sesame oil) in a pan over medium heat. Add the sliced mushrooms and stir-fry until softened. Stir in 1 Tbsp soy sauce and a pinch of minced garlic, and continue cooking. Finish with a sprinkle of sesame seeds for a fragrant touch.

5. **Prepare Sautéed Carrots:** Peel the carrot and slice it into strips about 0.5cm thick. Lightly oil a pan and sauté the carrot strips over medium-high heat. Once slightly cooked, season with a pinch of salt. Finish by adding a pinch of sesame oil and sesame seeds. It’s best to sauté carrots briefly to maintain a slight crispness.

6. **Prepare Seasoned Spinach:** Trim the roots of the spinach and wash thoroughly. Blanch in boiling water for about 30 seconds to 1 minute, then immediately rinse under cold water and squeeze out excess moisture. Cut into bite-sized pieces. In a bowl, combine the blanched spinach, 1 Tbsp soy sauce (or salt), a pinch of minced garlic (optional), a pinch of sesame oil, and sesame seeds. Gently mix with your hands to create a flavorful and tender spinach side dish.

7. **Prepare for Bibimbap Assembly:** Fry the egg to your preference, either sunny-side up (soft yolk) or fully cooked. For the silken tofu, remove it from the package and place it in a microwave-safe dish. Heat for 30 seconds to 1 minute until warm. Warm tofu enhances the overall flavor of the bibimbap.

8. **Prepare the Dallae Sauce:** If using store-bought dallae sauce, have it ready. If making your own, finely chop the dallae (Korean wild chives) and mix with soy sauce, sesame oil, sesame seeds, and a pinch of minced garlic. This sauce is key to the bibimbap’s flavor, so prepare it with care.

9. **Assemble the Silken Tofu Bibimbap:** Place a bowl of warm rice in a large serving dish. Arrange the six prepared vegetable side dishes attractively around the rice. In the center, place the warmed silken tofu and the fried egg. Drizzle with the dallae sauce, a bit of sesame oil, and a sprinkle of sesame seeds. Mix everything together and enjoy this nutritious and vibrant Silken Tofu Bibimbap!
