Cooking Instructions

Step 1

Prepare all the ingredients included in the Mala Tang meal kit. Cut the pressed tofu sheets (podubu) into bite-sized pieces. (Podubu has a unique texture that complements the Mala Tang broth, adding richness.)

Step 2

Heat a pan over medium heat. Add chili oil, whole Sichuan peppercorns (or sansho), and dried chilies. Stir-fry until fragrant, being careful not to burn them. (This step builds the base for the signature numbing and spicy Mala Tang flavor.)

Step 3

Add the beef (or pork), various vegetables, and mushrooms to the pan. Stir-fry briefly until the ingredients are just lightly cooked. Then, pour in 450g of water and bring to a boil.

Step 4

Now, add the ‘Mala Paste’, the heart of Mala Tang. Add the entire packet of paste included in the kit to achieve that deliciously spicy flavor.

Step 5

To deepen the savory broth, add the ‘Stew Seasoning’. (You can adjust the amount of seasoning to your preference.)

Step 6

For a rich broth, add the ‘Broth Concentrate’. This will add depth and make your Mala Tang taste even more professional.

Step 7

If you prefer it spicier, add ‘chili powder’. (Adjust the amount according to your heat tolerance.)

Step 8

Add the chewy ‘corn noodles’ and cook them in the broth. Stir occasionally to prevent the noodles from sticking together.

Step 9

Add the pre-cut ‘pressed tofu sheets’ (podubu). Podubu absorbs the broth beautifully, providing a soft texture and absorbing the rich flavors.

Step 10

Finally, add fresh ‘bean sprouts’ for a crisp texture. Cook for just a short time after adding the sprouts to maintain their crunchiness. Enjoy your delicious Mala Tang!
