Making Luscious Beef Rolls Encasing Plump Shrimp

Currently, I’m on a mission to clear out my refrigerator! One of the ingredients that’s always in my freezer is shrimp and thinly sliced beef (like brisket). So, I thought, why not combine these two? This led me to create these delightful beef rolls where plump shrimp are rolled up inside tender slices of beef. They’re perfect for using up what you have and adding a special touch to any meal!

  • 200g thinly sliced beef (e.g., brisket)
  • 16-17 peeled and deveined shrimp

Cooking Instructions

Step 1

First, let’s prepare the shrimp. If using frozen shrimp, thaw them in cold water until they are soft. Once thawed, it’s crucial to pat them thoroughly dry with paper towels. This helps the seasoning adhere well and prevents excess moisture during cooking. Lightly season the shrimp with a pinch of salt and pepper, and let them marinate for about 10 to 20 minutes.

Step 2

Next, handle the beef. Use paper towels to gently press and remove any excess blood from the surface of the thinly sliced beef. Removing the blood will reduce any gamey odors and result in a cleaner flavor. Cut the beef slices into manageable pieces, roughly the size of your palm, suitable for rolling.

Step 3

Now, let’s make the delicious sauce for our beef rolls! In a small bowl, combine 2 tablespoons of sugar, 1 tablespoon of water, 1/2 tablespoon of minced garlic, 4 tablespoons of cooking wine, 1 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Whisk everything together until well combined and smooth. The sugar and oyster sauce will add a wonderful depth of flavor and a subtle sweetness.

Step 4

Lay out the thinly sliced beef on a cutting board or clean work surface. Place the slices without overlapping them too much, as this will make it easier to roll the shrimp inside.

Step 5

Place one prepared shrimp onto each slice of beef. Position the shrimp so that its head and tail are within the beef, not sticking out. Now, carefully roll the beef around the shrimp, tucking it in snugly. Make sure to roll it tightly so the shrimp stays securely inside.

Step 6

To ensure the rolls don’t come undone while cooking, lightly dust the very end of the beef roll with a little all-purpose flour. This acts like a natural adhesive. (If you don’t have flour, you can skip this step.)

Step 7

It’s time to cook! Lightly coat a frying pan with a thin layer of cooking oil – you don’t want too much, or it might become greasy. Heat the pan over medium heat.

Step 8

Once the pan is warm, carefully place the beef rolls onto the hot surface, seam-side down (the side where you applied the flour). This helps to seal the roll and prevent it from unraveling as it cooks.

Step 9

As the beef rolls begin to cook, gently turn them occasionally to ensure they brown evenly on all sides. Cook until the beef is nicely seared and has a beautiful golden-brown color.

Step 10

When the beef is almost fully cooked and no longer pink, pour the prepared sauce into the pan. Reduce the heat to medium-low and let the sauce simmer and thicken, coating the rolls beautifully.
