Shrimp Penne Stir-fry

Main Ingredients- 1 pack cocktail shrimp (thawed if frozen)
- 1/2 onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 200g penne pasta
Sauce & Seasonings- 4 medium tomatoes
- 2 Tbsp gochujang (Korean chili paste)
- 0.5 Tbsp salt
- 1 Tbsp sugar
- 1 piece butter (approx. 10g)

Cooking Instructions
Step 1
First, prepare the 4 tomatoes. Make a shallow cross-shaped cut on the bottom of each tomato. Blanch them in boiling water for 3-4 minutes with the cut side down. This will make the skins peel off easily.
Step 2
While the tomatoes are blanching, thinly slice the garlic and slice the onion in half lengthwise, then cut into thin strips.
Step 3
Heat a wide pan over medium heat. Add 3 Tbsp of cooking oil and 1 piece of butter. Let the butter melt; it will add a wonderful aroma.
Step 4
Once the butter is melted, add the sliced garlic. Stir gently and cook over medium-low heat until the garlic is golden brown and fragrant. Be careful not to burn it.
Step 5
When the garlic is golden, add the sliced onions. Sauté over medium heat until the onions become translucent. This will bring out their natural sweetness.
Step 6
Mash the blanched and peeled tomatoes. Aim for a smooth consistency with minimal lumps.
Step 7
Add the mashed tomatoes to the pan. Stir in 2 Tbsp of gochujang and 1 Tbsp of sugar. Mix well. Let this sauce simmer over medium heat for about 10 minutes until it thickens into a rich sauce.
Step 8
In a separate pot, fill about 2/3 with water and add 0.5 Tbsp of salt. Bring to a boil. Once boiling, add the penne pasta and cook for about 2 minutes less than the package instructions suggest. When the pasta is almost done, add the cocktail shrimp and cook together. (If using frozen shrimp, ensure they are thawed first).
Step 9
Drain the cooked penne and shrimp. Add them to the pan with the gochujang tomato sauce. Toss everything together gently until the pasta and shrimp are well coated with the sauce. You can adjust the pasta’s cooking time to your preference.
Step 10
Finally, plate your delicious Shrimp Penne Stir-fry beautifully! For an extra touch, you can garnish with a sprinkle of parsley flakes or cheese. Enjoy!
