Shrimp Paste Salad (Saewujeot Muchim): A Savory and Nutty Korean Side Dish
Savory and Nutty Seasoned Shrimp Paste
This Saewujeot Muchim (seasoned fermented shrimp paste) is a fantastic side dish, especially when you’re craving something flavorful and appetite-stimulating. It’s surprisingly nutty and savory, making it incredibly addictive with rice. However, fermented shrimp paste is quite salty, so we highly recommend using a low-sodium version for a more balanced and delicious result. Using low-sodium saewujeot will bring out a wonderful nutty aroma and rich flavor that the whole family will love.
Main Ingredients- 5 Tbsp fermented shrimp paste (saewujeot)
- 1/2 white part of a large green onion
- 5 Korean green chili peppers (or similar spicy peppers)
Seasoning- 2 Tbsp red pepper flakes (gochugaru)
- 1.5 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds
- 2 Tbsp mirin (rice wine)
- 1 Tbsp minced garlic
- 2 Tbsp red pepper flakes (gochugaru)
- 1.5 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds
- 2 Tbsp mirin (rice wine)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
Begin by preparing the star ingredient: 5 tablespoons of fermented shrimp paste (saewujeot). The saltiness can vary, so it’s a good idea to taste as you go and adjust the amount if needed. Using low-sodium saewujeot is highly recommended for a more balanced and nutty flavor profile.
Step 2
Finely mince the 5 Korean green chili peppers (or ‘ttengcho’). If you prefer it spicier, keep the seeds; for a milder version, remove the seeds before mincing. Also, finely mince the white part of the green onion. The fresh aroma of the green onion will complement the rich umami of the shrimp paste wonderfully.
Step 3
In a mixing bowl, combine the 5 tablespoons of prepared shrimp paste. Add all the seasoning ingredients: 2 tablespoons of mirin, 2 tablespoons of red pepper flakes, 1.5 tablespoons of sesame oil, 1 tablespoon of minced garlic, and 2 tablespoons of toasted sesame seeds. Finally, add the finely minced chili peppers and green onion.
Step 4
Using a spoon, gently mix all the ingredients together until well combined. It’s important to break down any large clumps of shrimp paste and ensure the seasonings are evenly distributed. Mix thoroughly so the flavors meld together. Taste and adjust seasoning if necessary – add a little more shrimp paste if it’s too bland, or a pinch of sugar for a hint of sweetness.
Step 5
Once everything is well mixed and the flavors have melded, transfer the delicious Saewujeot Muchim to a clean storage container. This visually appealing and flavorful side dish is now ready to be stored in the refrigerator. It looks so appetizing, you’ll want to dig in right away!
Step 6
To enjoy, scoop out a small portion onto your plate each time you serve it with rice. This way, you can savor its fresh flavors. This addictive Saewujeot Muchim is perfect for whetting your appetite!
