Shrimp Paste and Zucchini Stew (Saewujeot Hobak Jjigae)
Simple and Flavorful Shrimp Paste and Zucchini Stew Recipe

This is a clear and refreshing zucchini stew made with fresh Korean zucchini, freshly picked from the garden. Even without a separate broth, the shrimp paste alone provides a deep umami flavor, making it a quick and easy stew to prepare during the summer. Main Ingredients- 1 Korean zucchini (Joseon hobak)
- 1 Tbsp fermented shrimp paste (Saewujeot)
- 1/2 Tbsp minced garlic
- 2 cups water (approx. 400ml)
- A small amount of chives or green onions
Cooking Instructions
Step 1
Pour 2 cups (approx. 400ml) of water into a pot and add 1 tablespoon of fermented shrimp paste. Thanks to the deep umami flavor of the shrimp paste, you can enjoy a clear and refreshing broth without making a separate stock. (Using homemade fermented shrimp paste will add even more depth. Slightly aged shrimp paste, like Ganghwa Yukjeot or Chujeot, can enhance the stew’s flavor.)

Step 2
Cut the round Korean zucchini in half, then slice it into pieces about 1cm thick. If you slice the zucchini too thinly, it will easily fall apart when cooked, so slicing it a bit thicker will maintain its texture and provide a satisfying chew.

Step 3
Add the sliced zucchini to the shrimp paste broth and bring it to a boil. Skim off any foam that rises to the surface while simmering to ensure a clean and refreshing taste for the broth.

Step 4
Zucchini cooks quickly, so it doesn’t need to be simmered for a long time. When the zucchini is almost cooked and still has a slight crispness, add 1/2 tablespoon of minced garlic and simmer for a little longer. The garlic will subtly infuse its aroma, enhancing the overall flavor.

Step 5
Finally, add the prepared chives (or green onions) to finish the stew. Nowadays, chives are often used instead of green onions for a fragrant touch. If you prefer a spicier kick, you can add sliced chili peppers (green or red). You can also add leftover vegetables or mushrooms from your refrigerator to the stew for extra flavor and texture. However, for the most authentic taste, I personally find that using only the bright yellow Korean zucchini makes this stew taste the best.
