I truly adore dishes made with seaweed! From refreshing seaweed soup and chilled seaweed salad to tangy seaweed salad with vinegar dressing, I love them all. This time, I wanted to explore a different kind of seaweed dish and decided to try making seaweed rice in an electric rice cooker. The combination of succulent shrimp, fragrant shiitake mushrooms, and the oceanic essence of seaweed creates a truly unique and satisfying meal that’s perfect in just one bowl. Don’t worry, it’s simpler than it sounds! With an electric rice cooker, anyone can easily create this wonderful recipe. Let’s get cooking!
Rice Cooking Ingredients- 2 Tbsp dried seaweed (cut)
- 5 dried shiitake mushrooms
- 4 cocktail shrimp
- 3 pieces of dried kelp (about 5x5cm each)
- 1 cup brown rice
- 1 cup white rice
Seaweed Seasoning- 1 Tbsp soy sauce
- 1 Tbsp perilla oil (deulgireum)
Seasoning Sauce- 2 Tbsp soy sauce
- 1 Tbsp water
- 1/2 Tbsp toasted sesame seeds
- 1 Tbsp chopped green onion
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
Making the Flavorful Broth: Add 3 pieces of dried kelp to 500ml of water and let it steep for about 10 minutes to create a delicious kelp broth. Remove the kelp pieces and use only the broth.
Step 2
Rehydrating Shiitake Mushrooms: Soak the dried shiitake mushrooms in lukewarm water until they are fully rehydrated. Once softened, slice them into bite-sized pieces.
Step 3
Washing the Rice: Wash 1 cup of brown rice and 1 cup of white rice together until the water runs clear. Soaking the rice for about 30 minutes beforehand will result in a softer and tastier cooked rice.
Step 4
Soaking and Preparing Seaweed: Soak 2 tablespoons of dried seaweed in cold water until completely rehydrated. Once softened, drain the seaweed thoroughly by squeezing out excess water using a sieve.
Step 5
Seasoning the Seaweed: In a bowl, combine the drained seaweed and the rehydrated, sliced shiitake mushrooms. Add 1 tablespoon of soy sauce and 1 tablespoon of perilla oil, then gently mix to lightly season the ingredients. This step enhances the aroma and flavor of the rice.

Preparing for Rice Cooking: Place the washed rice into the inner pot of your electric rice cooker. Pour in the prepared kelp broth, adjusting the amount to match the water level for cooking rice according to your rice cooker’s markings. (You can adjust the water level based on your usual rice cooking preference.)

Adding Ingredients and Cooking: Evenly spread the seasoned seaweed and shiitake mushrooms over the rice. Arrange the cocktail shrimp on top. Then, press the ‘Cook’ button on your rice cooker to begin cooking the delicious rice.

Sautéing the Shrimp: While the rice is cooking, lightly melt some butter in a frying pan and sauté the cocktail shrimp until golden brown on both sides. The buttery aroma of the sautéed shrimp adds a wonderful flavor to the finished rice.

Making the Seasoning Sauce: In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of water, 1 tablespoon of sesame oil, 1/2 tablespoon of toasted sesame seeds, and 1 tablespoon of chopped green onion. Mix well to create a flavorful seasoning sauce.

Serving and Enjoying: Scoop the freshly cooked, warm seaweed and mushroom rice into a bowl. Generously top with the beautifully sautéed cocktail shrimp. Serve with the prepared seasoning sauce on the side, and mix everything together before enjoying.
