- 2 dried red chilies
- 6 cloves garlic
- 2 servings pasta (approx. 150-200g)
Flavorful Sauce- 1/2 cup extra virgin olive oil
- Salt (to taste)
- Ground black pepper (to taste)
- 1/2 cup extra virgin olive oil
- Salt (to taste)
- Ground black pepper (to taste)
Cooking Instructions
Step 1
Start by preparing your ingredients. Have 1 cup of peeled and deveined shrimp ready. If using oyster mushrooms, tear them into bite-sized pieces. Slice the 2 dried red chilies thinly on an angle after removing the seeds. Peel and prepare the 6 cloves of garlic.
Step 2
Thinly slice the peeled garlic cloves into about 0.3cm thick rounds. Slicing the garlic thinly will allow its aroma to infuse beautifully into the olive oil.
Step 3
Heat 1/2 cup of extra virgin olive oil in a pan over low heat. Add the sliced garlic and gently fry it until it turns a light golden brown. Be careful not to burn the garlic, as this will make it bitter. You’re aiming for a fragrant, crispy texture.
Step 4
Once the garlic is fragrant and starting to turn golden, add the sliced dried red chilies to the pan. Sauté them briefly with the garlic to release their subtle heat and aroma into the oil.
Step 5
When the garlic and chilies have released their flavors, add the shrimp to the pan. Stir-fry over medium-high heat until the shrimp turn pink and are cooked through. This will take about 2-3 minutes.
Step 6
Add the oyster mushrooms to the pan along with the shrimp. Stir-fry for another minute until the mushrooms are tender. If you don’t have oyster mushrooms, feel free to skip this ingredient.
Step 7
Meanwhile, bring a pot of generously salted water to a rolling boil. Add 2 servings of pasta and cook according to package directions, aiming for al dente (usually 8-10 minutes). Before draining, reserve about 1 cup of the starchy pasta water.
Step 8
Drain the cooked pasta and toss it with 2 tablespoons of olive oil. This prevents the pasta from sticking together and adds a nice sheen.
Step 9
Add the drained pasta directly into the pan with the shrimp, garlic, and chilies. Toss everything together to coat the pasta with the flavorful oil.
Step 10
Continue to stir-fry over medium heat for about 1-2 minutes, allowing the pasta to absorb the delicious flavors from the oil and other ingredients.
Step 11
Add the oyster mushrooms back into the pan if you used them. Stir-fry briefly. If the pasta seems a bit dry, add a splash of the reserved pasta water (about 1/4 cup) and stir to create a light sauce that coats the pasta beautifully. Season with salt and freshly ground black pepper to your taste. Your delicious Shrimp Gambas Pasta is now ready!

Step 13
You might wonder if it’s too rich with all the olive oil. Don’t worry! The garlic, fried in the oil, infuses a wonderful flavor that balances the richness. The dried chilies also add a subtle heat that cuts through any potential greasiness, creating a harmonious taste.
