Fluffy and Delicious Shrimp Fried Rice
Whenever I have leftover vegetables in the fridge, fried rice is always my go-to dish! Today, I’ve made shrimp fried rice using shrimp from my freezer. It’s a simple yet satisfying meal, perfect for any occasion.
Main Ingredients- Shrimp, appropriate amount (about 10-15 shrimp)
- Cooked rice, 2 bowls (warm, reheat cold rice slightly in the microwave if needed)
- Onion, 1/4 medium
- Zucchini, 1/4 medium
- Carrot, 1/4 medium
- Broccoli, 1/4 medium
Seasoning and Others- Salt, 0.5 Tbsp (adjust to taste)
- Oyster sauce, 1 Tbsp (for umami flavor)
- Pepper, a pinch
- Cooking oil, 3 Tbsp

Cooking Instructions
Step 1
Prepare the shrimp: Peel and devein the shrimp. Rinse them under cold water and pat them dry with a paper towel. If the shrimp are large, you can cut them into smaller pieces.
Step 2
Chop the vegetables: Finely dice the onion, zucchini, carrot, and broccoli. Feel free to use any other leftover vegetables you have in your refrigerator, such as bell peppers, mushrooms, or peas. Uniformly chopped vegetables will cook evenly.
Step 3
Make the aromatic oil: Heat the cooking oil in a large skillet or wok over medium-low heat. Add chopped scallions (about 1/4 stalk) and sauté until fragrant and lightly golden. This step, known as making ‘scallion oil,’ adds a wonderful depth of flavor to the fried rice.
Step 4
Sauté the vegetables: Once the scallion oil is fragrant, add all the chopped vegetables (onion, carrot, zucchini, broccoli, etc.) to the skillet. Stir-fry over medium heat until the vegetables are slightly softened and translucent, about 2-3 minutes.
Step 5
Add the shrimp: After sautéing the vegetables for about 2 minutes, add the prepared shrimp to the skillet. Continue to stir-fry until the shrimp turn pink and are cooked through. Be careful not to overcook the shrimp, as they can become tough.
Step 6
Add rice and seasonings: When the shrimp are almost cooked, add the warm cooked rice to the skillet. Break up any clumps of rice with your spatula and mix it thoroughly with the vegetables and shrimp. Now, it’s time for seasoning! Add the salt (0.5 Tbsp), oyster sauce (1 Tbsp), and a pinch of pepper. Stir-fry everything together over high heat for about 1-2 minutes, ensuring the seasonings are evenly distributed.
Step 7
Serve and enjoy: Your delicious and fluffy shrimp fried rice is ready! Serve hot and garnish with your favorite toppings, such as a fried egg or shredded seaweed, for an extra special meal.
