Hello everyone! On Tuesdays, my husband gets home late, so I usually make dinner for our child before heading out. He takes care of dinner on all other days, which is convenient since I work evenings. Fried rice is the perfect one-bowl meal and always a hit! Making it with ingredients your child loves will make them eat even better. This shrimp fried rice recipe is a favorite that my child always devours with delight!

  • Carrot (finely diced)
  • Scallion (chopped)

  • Frozen shrimp (thawed and patted dry)
  • Eggs
  • Butter
  • Oyster sauce

First, prepare the vegetables for your fried rice. Dice the carrot into small, bite-sized pieces so it’s easy for children to eat. This also adds a lovely color and texture.

Chop the scallions. The fragrant oil released from sautéing the scallions will significantly enhance the flavor of your fried rice.

Finely dice the onion, similar in size to the carrots. Avoid dicing them too small; aim for a size that retains a pleasant bite. When making shrimp fried rice, starting with sautéed scallions to create ‘scallion oil’ will result in a much richer flavor.

Thaw the frozen shrimp by soaking them in cold water or leaving them at room temperature for a short while. Once thawed, rinse them lightly under water and thoroughly pat them dry with paper towels. Excess moisture can make the fried rice soggy.

Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped scallions and onions and sauté until fragrant. A pinch of salt can help bring out the natural sweetness of the vegetables. Once the scallions are fragrant, add the diced carrots and continue to stir-fry.

Once the vegetables are partially cooked, push them to one side of the pan. Pour the beaten eggs into the empty space and scramble them.

Since this is for my child, I cut the shrimp in half. My child loves shrimp and tends to pick them out first if they are whole. Cutting them into smaller pieces ensures they are distributed evenly and enjoyed throughout the dish.

Add the cooked vegetables and scrambled eggs to the pan, followed by a suitable amount of cooked rice. Don’t forget to add a piece of butter – it’s essential for enhancing the fried rice’s flavor! As the butter melts, it will lend a rich, buttery aroma and taste. Stir-fry to combine the rice with the other ingredients.

Now, add 2 tablespoons of oyster sauce. Oyster sauce is the magic ingredient that adds a delicious umami depth to fried rice.
