The fragrant aroma of crown daisy combined with the chewy texture of shrimp will bring immense joy to your palate. They are easy to make, perfect for a weekend treat or a light snack.

  • 7 Shrimp (cocktail or medium-sized)
  • 1 Red Chili Pepper
  • 1 Green Chili Pepper

First, prepare the ingredients that will add flavor to the pancakes. Peel the shrimp, devein them along the back, and then mince them finely. Finely chop the red and green chili peppers after removing the seeds. If you like it spicier, you can increase the amount of green chili or leave some seeds in.

Wash the crown daisy thoroughly under running water to remove any dirt or debris. Lightly drain the water and then chop it into large pieces, about 2-3 cm long. Cutting them too small can make them mushy when cooked, so aim for a moderate size.

Now, let’s make the delicious batter! Crack 2 eggs into a wide bowl. Add 5 Tbsp of pancake mix, 5 Tbsp of frying mix, and 3 pinches of salt. Using frying mix along with pancake mix will result in a crispier texture. Gradually pour in 100ml of water while mixing thoroughly with a whisk or chopsticks until there are no lumps. If the batter is too thin, the pancake will be thin; if it’s too thick, it will be heavy. Adjust the water amount while observing the consistency.

Add the prepared minced shrimp and minced chili peppers (red and green) to the batter. Gently mix with a spoon or spatula until the ingredients are evenly coated with the batter.

Finally, add the large chopped crown daisy and gently mix. It’s important to mix lightly to avoid breaking the crown daisy. Be careful not to overmix after adding the crown daisy.

Pour a generous amount of cooking oil into a heated pan. Once the pan is sufficiently hot, scoop the batter with a spoon and place it onto the pan, forming round, flat shapes. You can adjust the size of the pancakes to your preference. If you make them too thick, they might not cook through, so spread them to a moderate thickness.

When the edges start to turn golden brown over medium heat, carefully flip the pancakes using tongs or a spatula. After flipping, reduce the heat to low and cook slowly until the inside is done. Cook for about 3-4 minutes on each side until golden brown. For an extra aromatic touch, you can drizzle a little sesame oil at the end while cooking.
