Curry is such a versatile dish that can be made delicious with a variety of main ingredients. I find myself frequently making curry, especially when I want to use up leftover vegetables in the refrigerator. Today, I’ve made a shrimp curry using frozen shrimp, which I always keep stocked in my freezer. I also added tomatoes, which are abundant in my fridge, to enhance the dish with a refreshing tang. The combination of shrimp and tomato offers a unique and healthy flavor profile that makes me want to cook it often.

Ingredients (Serves 4)

  • 8 Shrimp
  • 4 Tomatoes
  • 1/2 Onion
  • 5cm Carrot
  • 5cm Zucchini
  • 2 Potatoes
  • 4 servings Curry Roux (solid type)
  • 500ml Water

Cooking Instructions

Step 1

Prepare 4 tomatoes. Remove the stems and cut them into bite-sized pieces. Place them in a blender and puree until smooth. This will create a flavorful tomato base for your curry.

To add a fresh texture and taste of tomato, cut 1 additional tomato into bite-sized pieces (about 1 cm). Set aside. These will be added later for a fresh burst of flavor.

Prepare 8 shrimp. If using frozen shrimp, thaw them by soaking in cold water. Once thawed, drain them and pat dry with paper towels before using.

Prepare the vegetables: chop 5cm of carrot, 1/2 onion, 2 potatoes, and 5cm of zucchini into similar, bite-sized cubes (approximately 1.5cm). Ensuring uniform size helps them cook evenly.

Heat a little oil in a pot over medium heat. Add all the prepared vegetables. Sauté them until they begin to soften and become slightly translucent, about 3-4 minutes, allowing their natural sweetness to develop.

Add the shrimp and the diced fresh tomato to the pot. Continue to sauté for another 1-2 minutes, or until the shrimp turn pink and opaque and the tomatoes soften slightly. Stir well to combine with the vegetables.

Pour in 500ml of water. Cover the pot and let it simmer over medium-low heat for about 10-15 minutes, or until the vegetables, especially the potatoes and carrots, are tender. Once the vegetables are cooked through, stir in the pureed tomatoes and the curry roux. Stir continuously until the roux is completely dissolved.

Continue to simmer the curry for another 2-3 minutes, stirring occasionally, until it thickens and the flavors meld together beautifully. Be mindful not to let it burn at the bottom.
