Main Ingredients- Dried seaweed 1 cup (when rehydrated)
- Frozen shrimp 200g
- Water 4 cups (approx. 800ml)
- Fish sauce 2 Tbsp
- Concentrated broth cubes 2 (or anchovy broth)
- Sesame oil a little
Cooking Instructions
Step 1
First, soak the dried seaweed in cold water generously for about 15-20 minutes until fully rehydrated. Once rehydrated, rub the seaweed thoroughly with your hands under running water and rinse multiple times. This is crucial for removing any residual saltiness and impurities. Squeeze out excess water from the clean seaweed and set aside.
Step 2
Thaw the frozen shrimp by soaking them in cold water. Once thawed, drain them in a sieve to remove excess moisture. If the shrimp pieces are large, you can gently pound them with the back of a knife to make them more tender.

Heat a pot over medium-low heat with a little sesame oil. Add the squeezed seaweed and stir-fry for 1-2 minutes until it softens. Then, add the shrimp and continue to stir-fry until the shrimp turn opaque (about 2-3 minutes). Stir-frying the seaweed first will enhance its flavor and deepen the broth’s taste. Pour in 4 cups of water.
Step 4
Add the 2 concentrated broth cubes to the water to build the base flavor of the soup. If you don’t have broth cubes, anchovy and kelp broth can be used. Once the soup comes to a boil, reduce the heat to medium-low and add 2 tablespoons of fish sauce for seasoning. Fish sauce adds umami and a rich flavor. Adjust with salt if needed.
