Fried Rice Ingredients

  • 1/4 Carrot (finely diced)
  • 1/4 Onion (finely diced)
  • 10 Shrimp (peeled and deveined)
  • 1/4 Green Onion (chopped)
  • 3 bowls Cooked Rice (warm)
  • 3 Eggs
  • 1/4 Cherry Tomato (finely chopped, for garnish)
  • 2 Tbsp Olive Oil

Seasoning

  • 2 Tbsp Oyster Sauce
  • 3 Tbsp Soy Sauce (adjust to taste; you might want to reduce soy sauce as it can be slightly salty)
  • 2 Tbsp Minced Garlic

Start by preparing your vegetables. Finely dice the carrot and onion into small pieces (about 0.5 cm or smaller). Heat 2 tablespoons of olive oil in a pan over medium heat. Add the diced carrots and onions and stir-fry until fragrant, being careful not to burn them.

Once the vegetables become slightly translucent, add the prepared shrimp and chopped green onions. Continue to stir-fry until the shrimp turns pink and the green onions release their aroma. Ensure the ingredients don’t stick to the bottom of the pan.

Push the cooked vegetables and shrimp to one side of the pan. Pour the 3 beaten eggs into the empty space and scramble them until about 70% cooked. Then, add the 3 bowls of warm cooked rice and gently break up any clumps of rice with your spatula.

It’s time to season! Evenly drizzle 2 tablespoons of oyster sauce, 3 tablespoons of soy sauce, and 2 tablespoons of minced garlic over the ingredients in the pan. (Tip: It’s best to adjust the amount of soy sauce according to your preference. Consider starting with a little less and then adding more if needed to achieve the desired saltiness.)

Using your spatula, mix everything together thoroughly. Hold the spatula vertically and stir-fry to ensure the rice, vegetables, shrimp, and eggs are evenly coated with the sauce. Proper mixing is key for great flavor.

Once the eggs are fully cooked, press down on the rice with the spatula to break up any sticky clumps and help evaporate excess moisture, creating a perfectly fluffy fried rice.
