Cookie Dough Ingredients- 160g cake flour or all-purpose flour
- 40g water
- 40g cooking oil (like canola or grapeseed oil)
- 50g sugar
- 1g salt
- 20g sesame seeds (toasted or raw)

Step 1
First, prepare all your ingredients by measuring them accurately. Using toasted sesame seeds will enhance the nutty flavor even further.

In a large bowl, combine the 40g of cooking oil with 50g of sugar and 1g of salt. Whisk or stir with a spatula until the sugar is partially dissolved. If your sugar granules are very large, you can grind them into a finer powder.

Sift the 160g of cake flour (or all-purpose flour) into the bowl with the wet ingredients. Sifting prevents lumps and contributes to a smoother cookie texture.
Step 4
Add the 20g of sesame seeds to the mixture and gently combine with a spatula until just incorporated. Be careful not to overmix at this stage. The sesame seeds add a delightful crunch and nutty aroma.

Pour in the 40g of water and mix until no dry flour is visible, forming a cohesive dough. The dough should be workable, not too sticky or too dry. Adjust with a tiny bit more flour if too wet, or a splash more water if too dry.

Transfer the dough to a clean work surface or a sheet of parchment paper. Use a rolling pin to evenly roll out the dough to a thickness of about 0.4 to 0.5 cm (approximately 1/6 to 1/5 inch). Maintaining a consistent thickness is key for even baking.

Using a knife, cut the rolled-out dough into your desired shapes (squares or rectangles), or use cookie cutters for decorative designs. If using a knife, cut cleanly to avoid disturbing the dough.

Gently prick the surface of each cookie shape with a fork. This helps prevent the cookies from puffing up too much while baking and also adds a decorative touch.
Step 9
Arrange the cookies on a baking sheet lined with parchment paper. Sprinkle the remaining 1 Tbsp of sugar evenly over the tops.
