Main Ingredients- 1 pack Himanthalia Elongata (Toss, approx. 200g)
- 1/2 block firm tofu
Seasoning Ingredients- 0.5 Tbsp anchovy sauce
- 0.5 Tbsp minced garlic
- 1 Tbsp sesame oil
- Pinch of salt
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Since the salted himanthalia elongata can be quite salty, rinse it thoroughly under running cold water multiple times to remove excess salt.
Step 2
After rinsing, soak the himanthalia elongata in cold water for about 20-30 minutes to further reduce its saltiness. This step also helps enhance its chewy texture.
Step 3
Blanch the tofu in boiling water with about 0.5 tablespoon of salt for approximately 30 seconds. This helps remove any raw smell and firms up the tofu. Afterwards, gently press the tofu with paper towels to absorb excess moisture.
Step 4
Blanch the himanthalia elongata, after removing salt, in boiling water for just 30 seconds. Be careful not to overcook it, as it can become mushy. The key is to maintain its delightfully chewy texture.
Step 5
Immediately rinse the blanched himanthalia elongata under cold water to cool it down. Cut it into bite-sized pieces, then drain thoroughly in a colander.
Step 6
Place both the drained himanthalia elongata and the prepared tofu into a mixing bowl.

Add all the seasoning ingredients: 0.5 tablespoon of anchovy sauce, 0.5 tablespoon of minced garlic, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds for added aroma and flavor.

Wearing disposable gloves, gently mash the tofu as you mix it with the himanthalia elongata and seasonings. Ensure everything is well combined without breaking the tofu too much.

Taste the salad and adjust the seasoning if needed by adding a tiny pinch of salt. While the anchovy sauce provides a good umami flavor, feel free to adjust to your preference.
