Ingredients

  • Seaweed (Maesaengi) 300g
  • Oysters 220g
  • Water 1.1L
  • Anchovy Broth Cubes 3
  • Dried Kelp Pieces 5 sheets
  • Coarse Sea Salt 1 Tbsp (for washing oysters)
  • Soy Sauce for Soup (Guk-ganjang) 2 Tbsp
  • Fish Sauce (Chamchi-aek) 1 Tbsp
  • Minced Garlic 1 Tbsp
  • Sesame Oil 0.5 Tbsp
  • Salt to taste

Cooking Instructions

Step 1

Start by preparing the seaweed. Fill a bowl generously with water and add the seaweed. Gently rub the seaweed with your hands under running water to remove any small debris or grit. Carefully lift the washed seaweed out of the water and place it in a sieve or colander. Discard any sediment left at the bottom of the bowl. Repeat this rinsing process 2-3 times until the seaweed is thoroughly clean.

Next, clean the oysters. Place the oysters in a separate bowl and add enough water to cover them. Sprinkle in 1 Tbsp of coarse sea salt. Gently rub the oysters with your hands to clean them. It’s important to wash the oysters with water, as washing them dry can easily damage their delicate flesh. Repeat this rinsing 2-3 times until the oysters are clean and ready to use.

To create a flavorful base, make the broth. In a pot, combine 1.1L of water with 3 anchovy broth cubes and 5 pieces of dried kelp. Bring to a boil, then let it simmer for about 10 minutes to extract the flavors. Remove and discard the kelp pieces. If you don’t have broth cubes, you can use a handful of dried anchovies for the broth.

Once the broth is ready, add the cleaned seaweed to the pot. Simmer for about 2-3 minutes. Avoid overcooking, as the seaweed can become mushy. Then, stir in 2 Tbsp of soy sauce for soup, 1 Tbsp of fish sauce, and 1 Tbsp of minced garlic. Bring it to a rolling boil again to infuse the broth with more flavor.

Finally, add the cleaned oysters to the soup. Cook for just 1-2 minutes. Oysters can become tough if overcooked, so be mindful of the cooking time. After the oysters are cooked, taste the soup and adjust the seasoning with salt if needed. For an extra touch of flavor, drizzle in about 0.5 Tbsp of sesame oil just before serving.
