  • Sea Parsley (Shim-cho) 300g (cleaned and trimmed)

Seasoning

  • Chae Borri Gochujang (barley red pepper paste) 1.5 Tbsp
  • Minced Garlic 1/3 Tbsp
  • Salt 2 pinches
  • Sesame Seeds 1/3 Tbsp
  • Sesame Oil 1/3 Tbsp

Cooking Instructions

First, thoroughly wash the fresh sea parsley under running water to remove any dirt or debris, and trim off any tough stems. Prepare a pot of boiling water and add a pinch of coarse salt. Blanch the sea parsley for about 1 minute. Be careful not to overcook, as it can become mushy.

Immediately after blanching, drain the sea parsley and quickly rinse it under cold running water to stop the cooking process and cool it down. This step is crucial for maintaining its crisp texture. Rinse it 2-3 times in cold water.

To further enhance its crispness and refreshing taste, soak the rinsed sea parsley in a bowl of cold water for about 5 minutes. This also helps to mellow out any slight ‘green’ flavors.

In a mixing bowl, place the well-drained sea parsley. Add the Chae Borri Gochujang (1.5 Tbsp), minced garlic (1/3 Tbsp), salt (2 pinches), sesame seeds (1/3 Tbsp), and sesame oil (1/3 Tbsp) to create the seasoning. Chae Borri Gochujang is known for its savory and umami flavor, making it perfect for this dish.

Pour the prepared seasoning over the blanched sea parsley. Now it’s time to mix everything together! Gently combine the sea parsley with the seasoning.
