Main Ingredients

  • 30 sheets roasted laver (gim)
  • 1/2 green onion

Seasoning Ingredients

  • 3 Tbsp seasoned soy sauce or braising soy sauce (Use 2 Tbsp if using regular soy sauce)
  • 3 Tbsp oligo syrup (or corn syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp finely ground toasted sesame seeds

Cooking Instructions

First, prepare your laver sheets (gim). You can use either regular laver or gim that has a slightly rougher texture. Lightly roast the laver sheets in a dry pan over low heat, flipping them occasionally until they become crispy. Once cooled slightly, tear them into small, bite-sized pieces. Tearing them smaller will help the seasoning distribute evenly and prevent the gim from clumping together.

Finely mince the green onion. Wash the green onion, remove any tough outer leaves, and chop it as finely as possible. The mild pungency and aroma of the green onion will enhance the overall flavor of the gim muchim.

Now, let’s make the delicious seasoning sauce. In a bowl, combine 3 tablespoons of seasoned soy sauce (or braising soy sauce) and 3 tablespoons of oligo syrup. Mix them well until thoroughly combined. The key is to achieve a perfect balance of sweet and savory flavors. If you have homemade seasoned soy sauce, it will add an even richer taste. You can also use store-bought braising soy sauce. If you opt for regular soy sauce (jin ganjang), reduce the amount to 2 tablespoons. For that extra nutty flavor, prepare some toasted sesame seeds. Grind or crush them finely using a blender or mortar and pestle. Using ground sesame seeds not only intensifies the nutty aroma and taste but also helps your body absorb the nutrients more effectively compared to whole seeds.

Place the torn laver sheets into a mixing bowl. Add the finely minced green onion and the prepared seasoning sauce to the bowl.

Gently toss and mix the laver with your hands to ensure the seasoning is evenly distributed throughout the gim. Make sure every piece is coated. Finally, drizzle in 1 tablespoon of sesame oil and add the finely ground toasted sesame seeds. Mix lightly one more time to combine.

Serve the finished gim muchim attractively on a plate. The secret to a great gim muchim is to mix it well so that the seasoning is evenly coated on all the pieces without clumping.
