  • 1/2 medium onion

  • 1 Tbsp sugar
  • 1 Tbsp soy sauce (ganjang)
  • 1 Tbsp fish sauce (kkana-ri or anchovy)
  • 0.5 Tbsp minced garlic (1/2 Tbsp)
  • 2 Tbsp vinegar
  • 1.5 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp sesame oil
  • Sesame seeds, to taste

First, it’s crucial to prepare the garlic chives properly. Remove any wilted or bruised leaves. Pay close attention to the root ends, as they can hold soil, and rinse them thoroughly under running water multiple times. Washing them well ensures you can fully enjoy the fresh, distinct aroma of the chives.

Trim off the very ends of the roots from the thoroughly washed garlic chives. Then, cut them into manageable lengths of about 4 to 5 cm (approximately 1.5 to 2 inches). Cutting them to a suitable size will make them easier to eat.

Peel and wash the onion, then thinly slice it into shreds, similar in length to the cut chives. If you find raw onion too pungent, you can soak the shredded onion in cold water for a few minutes and then drain it before use to reduce its sharpness.

Place the prepared garlic chives and sliced onion into a wide bowl. Instead of adding all the seasonings at once, start by adding the 1 tablespoon of sugar and gently mix. The sugar will help to draw out some moisture from the chives, softening them slightly and preparing them to absorb the dressing better.
