This seasoned chive salad is a dish my mother used to make often. When lightly blanched and gently tossed with seasonings, it becomes delightfully sweet and refreshingly crisp. A true taste of home!

Main Ingredients

  • 1 bunch of chives
  • 1 red chili pepper
  • 3 cloves of garlic

Seasoning

  • 1 Tbsp soy sauce
  • 1/2 Tbsp fish sauce (or anchovy sauce)
  • 2 Tbsp sesame oil
  • 1 Tbsp sesame seeds
  • Salt to taste

To keep the chives fresh for about 3-4 days, don’t wash them immediately. Instead, wrap them tightly in newspaper and store them in the vegetable crisper of your refrigerator. Wash them just before you’re ready to prepare the dish.

Fill a pot with plenty of water and bring it to a rolling boil over high heat. Add 1/2 Tbsp of salt to the boiling water. Adding salt helps to maintain the vibrant green color of the chives.

Add the washed chives to the boiling water, starting with the stems. Submerge them briefly, then flip them over. Turn off the heat immediately after flipping. Chives can become tough if overcooked, so it’s crucial to blanch them only lightly for about 10-20 seconds, just until they wilt slightly.

Once blanched, quickly remove the chives from the hot water using a sieve and rinse them under cold running water. This step helps to preserve their crisp texture.

Gently squeeze out any excess water from the blanched chives. Cut them into bite-sized pieces, about 5 cm in length.

Thinly slice the red chili pepper and finely mince the garlic. Minced garlic will add a wonderful aroma and depth of flavor to the salad.

In a large bowl, combine the prepared chives, minced garlic, and sliced red chili pepper. Add the seasoning ingredients: 1 Tbsp soy sauce, 1/2 Tbsp fish sauce, 2 Tbsp sesame oil, and 1 Tbsp sesame seeds. Gently toss and mix everything with your hands until the seasoning is evenly distributed. If you don’t have fish sauce, anchovy sauce also works well to add umami.

Taste the salad and adjust the seasoning with salt if needed. Your delicious seasoned chive salad is ready! It’s sweet, wonderfully crisp, and perfect as a side dish for rice or as an accompaniment to meat dishes.
