Main Ingredients

  • 200g fresh tot (a type of brown seaweed)
  • 1 block soft or firm tofu
  • 1/2 green onion (scallion)
  • 1 tablespoon toasted sesame seeds

Seasoning

  • 1/2 tablespoon salt (or to taste)
  • 3 tablespoons sesame oil
  • 1/2 tablespoon minced garlic

Finely chop the green onion, which is the only vegetable in this dish. Slit the green onion lengthwise down the middle and then mince it as finely as possible. This ensures the flavor is evenly distributed throughout the salad.

Carefully prepare the tot. Remove any tough, stringy parts of the tot’s stems, as these can affect the texture. Using only the tender parts will result in a more pleasant eating experience.

Blanch the prepared tot in boiling water for about 30 seconds. Be careful not to overcook it, as it can become mushy. Immediately rinse the blanched tot under cold running water to cool it down and maintain its crisp texture.

Lightly blanch the tofu as well, similar to the tot. Boil the tofu for about 1 minute, then plunge it into cold water to cool. This step helps firm up the tofu, making it less likely to break apart when mixed.

It’s crucial to remove as much water as possible from the blanched tofu. Place the cooled tofu in a clean cheesecloth or paper towels and gently squeeze out all excess moisture. Excess water can dilute the seasoning and make the salad watery.

Now it’s time to combine all the ingredients in a mixing bowl. Add the prepared tot, the squeezed tofu, and the finely chopped green onion to a large bowl.

Add the seasoning ingredients: salt, sesame oil, toasted sesame seeds, and minced garlic. Gently mix everything together with your hands, like you’re kneading dough. Be careful not to mash the tofu; handle it lightly. Toss gently until all ingredients are evenly coated with the dressing.
