Ingredients- 50g Fresh Sea Purslane (washed thoroughly)
- 200g Cooked Rice (warm rice is best for porridge)
- 700ml Kelp Broth (homemade or store-bought)
- 1 pinch of Salt
- 1 tsp Soy Sauce
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
Rinse the fresh sea purslane multiple times under cold water to remove any dirt or debris. Gently shake off excess water. If the stems are long, you can cut them into bite-sized pieces.
Step 2
Prepare the cooked rice for the porridge. Using warm rice will help the grains break down smoothly, resulting in a creamier porridge.
Step 3
Prepare the kelp broth, which adds a deep, refreshing flavor. You can make this by simmering a piece of kombu in 700ml of water and removing the kelp once the water boils. Alternatively, use pre-made broth for convenience.
Step 4
In a wide pot, combine the kelp broth and cooked rice. Bring to a simmer over medium heat. It’s important to stir frequently with a spatula to prevent the rice from sticking to the bottom of the pot.
Step 5
Cook the porridge for about 10-15 minutes, or until it reaches your desired consistency, with the rice grains softening and thickening the mixture. Once the porridge is creamy, add the prepared sea purslane and cook for another 2-3 minutes, just until the purslane wilts and becomes tender. For a slightly crisper texture, cook for only 1 minute.
Step 6
Finally, stir in 1 teaspoon of soy sauce for added umami. Season with a pinch of salt to taste. Drizzle in 1 tablespoon of sesame oil for a rich aroma. Your delicious sea purslane porridge is now ready to be enjoyed warm.
