Main Ingredients- 1/2 block firm tofu (approx. 150-200g)
- 1 large egg
- 40g scallions (green onions), finely chopped, focusing on the white parts
Seasoning & Cooking Oil- 2 Tbsp cooking oil
- 1/2 Tbsp soy sauce
- Pinch of salt (for final seasoning)
- Pinch of black pepper
- Sriracha sauce, to taste (optional, for a spicy kick)

Cooking Instructions
Step 1
Prepare the Tofu: Take half a block of tofu. Gently pat it dry with paper towels to reduce splattering when frying.

Crumble and Fry Tofu: Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the crumbled tofu and stir-fry until golden brown. You can use a fork or spatula to break it down further as it cooks, aiming for a slightly crumbly texture. Season with a pinch of black pepper during cooking. Once nicely browned, transfer the tofu to a separate bowl.
Step 3
Sauté Scallions: In the same pan, add the remaining 1 Tbsp of cooking oil. Add the chopped scallions and sauté until fragrant. The sweet aroma of the scallions will enhance the dish’s flavor.
Step 4
Scramble Egg and Season: Once the scallions are softened, crack the egg into the pan and scramble it. When the egg is about 80% cooked, pour the 1/2 Tbsp of soy sauce around the edges of the pan. As the soy sauce heats and slightly caramelizes, it will coat the egg, adding a richer flavor. If you like a bit of heat, you can add a dash of Sriracha sauce here (optional).

Combine and Finish: Return the fried tofu to the pan. Stir everything together gently to combine. Finally, season with a pinch of salt to taste. It’s important to highlight the natural flavors of the ingredients, so use salt sparingly. Your dish is now ready!
