Scallops are abundant and delicious these days! If you’re craving grilled seafood but can’t go out, we’ve made a similar dish at home. Enjoy this delightful scallop cheese bake! ^^

Main Ingredients

  • 3kg fresh scallops
  • 1/2 onion
  • 1/3 can sweet corn
  • 150g mozzarella cheese

Seasoning

  • 1/3 cup gochujang-based dipping sauce (cho-gochujang)

Cooking Instructions

Step 1

First, thoroughly clean the scallops. It’s important to remove any sand or debris stuck between the shells for a clean taste. (Since I won’t be using the cooking liquid separately, I rinsed them multiple times.)

Steam the cleaned scallops. Place the scallops in a pot and add water until it reaches about half the height of the scallops. Cover the pot and bring to a boil. The steam generated will cook the scallops evenly, including those on top.

Once the scallops are cooked, carefully remove the meat from the shells and place it back into the cleaned shells for baking. Finely dice the onion. Rinse the sweet corn under running water, drain well, and pat dry to remove excess moisture. This helps retain its sweetness and removes any tinny flavor.

In a large bowl, combine the scallop meat, diced onion, and drained sweet corn. Add 1/3 cup of cho-gochujang.

Gently mix all the ingredients together. Taste and adjust seasoning with more cho-gochujang if needed, according to your preference. Be careful not to make it too salty.

Arrange the seasoned scallops in an oven-safe dish or baking container. Using the scallop shells makes for a more attractive presentation.

Generously sprinkle mozzarella cheese over the top of the scallops, according to your liking. More cheese means a richer flavor!

Bake in a preheated oven at 170°C (340°F) for about 7 minutes. If using a microwave, heat until the cheese is fully melted and bubbly. In an oven, bake until the cheese is golden brown and appetizing.
