Main Ingredients

  • Scallops, appropriately portioned
  • Warm black rice, 1 bowl (approx. 200g)
  • Eggs, 2
  • Green chili pepper, 1

Seasoning & Others

  • Sugar, 1/4 Tbsp
  • Soy sauce, 1 Tbsp
  • Butter, 1 piece (approx. 10g)
  • Minced garlic, 1/2 Tbsp
  • Oligosaccharide (or corn syrup), 1 Tbsp
  • Sesame seeds, for garnish

Cooking Instructions

Step 1

First, prepare your cleaned scallops. Place them in a steamer and steam for about 5-7 minutes until cooked through. Be careful not to overcook, as they can become tough. Once cooked, cut the scallop meat into bite-sized pieces.

In a bowl of warm black rice, add 1/4 Tbsp sugar and 1/2 Tbsp soy sauce. Mix gently to combine, ensuring the rice grains are separated and the seasoning is evenly distributed. You can substitute black rice with white or mixed grain rice if preferred.

Lightly grease a pan with cooking oil and heat over medium heat. Pour in the 2 beaten eggs. As the eggs begin to set, use a spatula or chopsticks to gently scramble them into bite-sized pieces.

In the same pan, add 1 piece of butter and let it melt. Once the butter is melted, add the thinly sliced green chili pepper and 1/2 Tbsp minced garlic. Sauté over low heat for about 1 minute until fragrant. Keep an eye on the garlic to prevent burning.

Add the steamed scallops to the pan and stir-fry them with the garlic and chili. Pour in 1/2 Tbsp soy sauce and 1 Tbsp oligosaccharide. Continue to stir-fry for 1-2 minutes until the scallops are coated and slightly glazed.

Add the seasoned black rice to the pan. Using a spatula, gently stir and mix all the ingredients together until well combined and the rice is heated through. Ensure the rice grains are loose and not clumpy.
