Cooking Instructions

Step 1

To ensure your scallions stay fresh for a long time, start by trimming off any wilted outer layers or bruised parts. Also, clean up the very base of the scallions.

Step 2

Gently remove any dry or withered sections from the green leafy parts. This step helps maintain their overall freshness and appeal.

Step 3

When removing the roots, you’ll find they often detach easily by hand, so you might not need a knife. If you plan to use the roots in cooking, you can leave a bit more length. Otherwise, trim them as close to the root base as possible.

Once prepared, thoroughly wash the scallions under running water. Make sure to rinse them well to remove any dirt or debris.

This is a crucial step: ensure ALL moisture is removed! If water remains, frozen scallions will clump together, making them hard to use, and refrigerated ones will quickly become slimy and spoil. Pat them completely dry with paper towels or a clean kitchen towel.

Step 6

Prepare an airtight container or a zip-top bag. Line the bottom generously with paper towels to absorb any residual moisture. This creates a dry environment that helps keep the scallions fresh.

Step 7

While some prefer to chop scallions finely for immediate use, it’s often unnecessary for storage. Simply cut them into manageable lengths, about 3 to 4 segments, that will fit easily into your container or bag. This makes them convenient to use later while preserving freshness.

Separate the green leafy parts from the white base sections. Storing them individually makes it easier to grab the right part for specific culinary uses.

Place the white parts into one prepared zip-top bag with paper towels, and the green parts into another. While some recipes use both together, they often have different applications (e.g., white parts for broths, green for garnish), so keeping them separate is more practical for cooking.

Now, store your prepared scallions in the freezer or refrigerator. Frozen scallions can stay fresh for a good 3 to 4 months, and refrigerated ones can last over a month if you remember to change the paper towels periodically. Enjoy your scallions without any waste!
