- Pinch of Fine Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, wash the scallions thoroughly and trim off the root ends. After washing, gently pat them dry and arrange them neatly on a cutting board.
Step 2
Carefully insert a skewer through the white parts of the scallions, keeping them aligned. This helps to hold their shape together while frying, making them easier to handle. You can trim the leafy ends of the scallions to fit the size of your pan.
Step 3
Lightly sprinkle the pancake mix evenly over the surface of the scallions. Coating them with the mix will help the egg batter adhere better and result in a crispier pancake.
Step 4
In a large bowl, crack the 2 eggs. Add a pinch of fine salt and pepper. Whisk the eggs thoroughly with a whisk until smooth and well combined, ensuring there are no lumps.
Step 5
Gently dip the scallions, coated in pancake mix, into the beaten egg mixture. Turn them over to ensure the egg batter coats each strand evenly.
Step 6
Heat your pan over medium heat and add enough cooking oil. Carefully place the egg-coated scallions into the hot oil. Reduce the heat to low and pour any remaining egg batter evenly over the scallions in the pan.
Step 7
Cook over medium-low heat, gently pressing down on the scallions with your spatula. This helps them adhere to the pan, cook evenly, and maintain a beautiful shape.
Step 8
Once the first side is golden brown, carefully flip the pancake using a spatula. Adjust the heat to medium-low and cook the other side until golden brown as well. Be mindful to prevent it from sticking to the bottom of the pan.
Step 9
When both sides are beautifully golden brown, your scallion pancake is ready! Transfer it to a serving plate while it’s warm. Enjoy this delicious pancake made without any seafood!
