Flavorful Scallion Fried Rice Recipe Using Homemade Doenjang
I’ve created a delicious fried rice using the doenjang (Korean fermented soybean paste) that I made at home. I developed a special sauce using this healthy, traditional Korean condiment to season the fried rice, and the result is truly outstanding! I’m so glad I had the opportunity to make this recipe that I’d only been conceptualizing. It’s a wonderful, satisfying meal that the whole family can enjoy.
Ingredients- 2 stalks scallions
- 2 eggs
- 2 Tbsp perilla oil
- 1 Tbsp homemade doenjang
- 0.5 Tbsp oligo syrup
- 0.5 Tbsp tuna extract (fish sauce)
- 1 bowl of freshly cooked rice
- A pinch of black pepper
- 3 strands chives (for garnish)
Cooking Instructions
Step 1
Begin by preparing all your ingredients. Finely chop the scallions and mince the chives for garnish. Whisk the eggs in a separate bowl.
Step 2
Have a bowl of freshly cooked, warm rice ready. Fluffy, well-cooked rice is key to a great fried rice texture. (Using Gawa-ji rice is recommended for optimal texture.)
Step 3
Heat 2 tablespoons of perilla oil in a pan over high heat. Once the oil is hot, add the chopped scallions. Sauté them until fragrant and slightly softened, allowing the scallion oil to infuse the pan. This step builds a wonderful aromatic base.
Step 4
As soon as the scallion aroma intensifies, pour in the whisked eggs. Let the eggs cook undisturbed for a few moments until they start to set at the edges.
Step 5
Reduce the heat to medium. Using a spatula or chopsticks, gently scramble the eggs until they are cooked through but still tender. Aim for soft, fluffy scrambled eggs.
Step 6
Push the scrambled eggs to one side of the pan. Add 1 tablespoon of homemade doenjang, 0.5 tablespoon of oligo syrup, and 0.5 tablespoon of tuna extract into the cleared space. Sauté gently over low heat to create the doenjang sauce, being careful not to burn it. This brings out its rich aroma.
Step 7
Add the bowl of rice to the pan. Quickly stir and toss everything together, ensuring the rice is evenly coated with the doenjang sauce and scrambled eggs. If using an induction cooktop, you can turn it off before adding the rice and use the residual heat to finish the cooking. Keep stirring to prevent clumping.
Step 8
Continue stir-frying until all ingredients are well combined and the rice has a glossy appearance. The goal is for each grain of rice to be coated and for the fried rice to be light and fluffy.
Step 9
Transfer the finished fried rice into a small bowl, pressing gently to shape it. Carefully invert the bowl onto a serving plate to create an appealing presentation.
Step 10
Finish by sprinkling a pinch of freshly ground black pepper over the top. Garnish with the finely chopped chives (or garlic scapes, if preferred) for a touch of freshness and color. Enjoy your delicious meal!
